"It's cold outside! OK it's FREEZING outside! I'm going to throw some white chicken chili in the crock pot . . . yum!" How often has a similar Facebook update sent you scurrying to the pantry (or the store) for ingredients? I had never made white chicken chili, but many of my hometown friends have turned me on to it recently. Here's the version I tried:
My friend directed me to this Food.com recipe as a starting point. It's really easy, a throw-it-all-in-and-forget-about-it kind of slow-cooker meal. In fact, I pulled this together after the morning Holiday Sing at school and before heading back over to have lunch with my son. First I put 2 boneless, skinless chicken breast halves in the slow cooker, then added 1 1/2 cups each cooked navy beans and prepared hominy. (I made mine from dried the day before, and undercooked them a little, but the original recipe uses 1 can, drained, of each.) I mixed together 1 small box cream of chicken soup (it was Pacific brand), 2 cups chicken stock, 1 small can of diced green chilis and 1 packet taco seasoning. My finished soup was a little salty for my taste, so next time I'll use low-sodium chicken broth. Poured the liquid over the chicken, beans and hominy, closed the lid and cooked on low for 8 hours.
After 8 hours I broke up the chicken with a wooden spoon and served with shredded cheese, sour cream and toasted tortilla strips. (The recipe calls for sour cream stirred in at the end, but my family hates sour cream so I just included it as an optional add-in.)
