  1. Add eggs, milk, oregano, paprika, and salt and mix until combined.
  2. Lightly oil the crockpot insert and then layer the ingredients starting with the cauliflowers, red pepper, sausage slices, and cheddar cheese.
  3. Pour on the egg mixture and then cover and cook on low for 6-7 hrs.

  • Make ahead – Assemble and refrigerate overnight before baking. Or make this overnight before you head to bed for the night to wake up to a warm and filling breakfast the next day. It's a great way to end the night with a little extra family time with my mini chefs before bedtime.
  • Store – Store in an airtight container in the refrigerator for up to 3 days.
  • Freeze – Let cool completely and freeze in portions for up to 3 months. It freezes welland heats up in the microwave in less than 2 mins.

Using the slow cooker for breakfast is a great way to wake up in the morning before the morning rush of getting everyone out the door starts. Using a crockpot isn't beneficial to every cooking situation but it's an incredibly useful kitchen tool to own. Here's why:

  • Tougher meats like chuck and less lean meats are tenderized during the longer cooking process.
  • More oven space. If you can create a dish in your crockpot, you'll free up much needed oven space during holiday parties. A slow cooker also travels well! No need to fight over oven space at your potluck if you use a slow cooker.
  • Development of flavour. You'll develop more flavours in your ingredients during the longer cooking time. All of those flavours of sausage, peppers and spices will develop while you're sleeping.
  • Slow cookers use less energy and won't heat up your home like an oven will. My slow cooker gets a lot of use in the summer when I just don't want to turn the oven on.
  • Less dishes. Okay, the morning is not the time to make a bunch of dishes to start your day. Letting the crockpot do all that work overnight is enough for me to use the slow cooker.
