What is London Broil

London broil is a great way to make a whole meal out of an inexpensive cut of meat - it used to refer to only flank steak, but now is commonly made from lean, tougher cuts and usually refers to top round like we're using in this air fryer recipe.

London broil is marinated to keep it tender and juicy, then air fried to medium rare perfection (you can cook longer for medium well, or well done.)

Because top round is tougher, it needs to be cooked HOT and FAST - making the air fryer a perfect method for perfect London Broil!

London Broil Marinade

The marinade in London Broil is critical, since we're relying on it to help break down some of the connective tissue in this lean meat - and infuse tons of flavor.

You can change up the herbs as you see fit (I am known to double or even triple the amount of garlic - you can't get enough garlic in my opinion) - but keep the amount of oil and vinegar the same.

You can change up what kind of oil or vinegar you use - but be sure to use the same amounts of oil and vinegar.

  • 3 tbsp olive oil
  • 3 tbsp red wine vinegar
  • 1 tablespoon garlic powder
  • 1 teaspoon smoked paprika (this isn't traditional for London broil but we love the flavor it gives steak in the air fryer)
  • 1 tbsp fresh chopped parsley
  • 1 tbsp fresh chopped oregano
  • ½ tbsp fresh thyme
  • 2 tsp sea salt
  • 1 tsp ground black pepper

How To Air Fry London Broil

Air frying London broil is insanely easy - but there are a couple tips and tricks to keep it tender, juicy, and delicious!

  • Don't skip the marinade time - it is essential to London broil to marinate for at least 2 hours.
  • Cook at the highest heat possible in your air fryer - you want a lovely char on the outside, and cooking it hot and fast will keep it from drying out.
  • Set the London broil in the air fryer however you can fit it in - if you have a round air fryer basket, some of the steak will go up the sides - that's fine, but try to lay it out instead of letting it bunch up or fold over on itself.
  • Flip London broil halfway through cooking for an even sear.

How Long to Air Fry London Broil

London broil is best when cooked very fast and very hot - crank your air fryer as high as it goes, and plan on a 10-15 minute cook time depending on the size of your top round and how done you'd like your London broil.

In these photos, I air fried my London Broil at 450 for 15 minutes for a medium rare, and flipped it once in the middle of cooking.

For the best results, please go by a digital thermometer to find the perfect temperature for your London broil and not the cooking time.

The internal temperature on a London broil should read 135 degrees for medium rare and 145 degrees for medium to well done.
